Khmer Chicken Tamarind

Summary:

This is a beautiful sweet and spicy recipe full of Cambodian heritage and nutritional goodness. Its a meal that you definately eat with your hands, along with rice and salad.

Ingredients:

  • 8 chicken wings
  • 5 table spoon tamarind sauce
  • 2 chopped red fresh chillies
  • 6 chopped shallots
  • 2 table spoons fish sauce
  • 2 table spoon palm sugar
  • 5 cloves chopped garlic
  • 1 tee spoon magic sarap seasoning granules
  • 100ml vegetable oil
  • 2 table spoon vegetable oil

 

Cooking method:

Using your hands mix the seasoning granules with the chicken wings making sure they are marinated well together.

Heat the frying pan and add 100ml of oil until hot, then all the chicken wings until cooked both sides (approx. 5 minutes) then remove chicken wings & leave on a plate to cool.

To make the tamarind sauce mixture heat frying pan & add 2 table spoons oil & add garlic, shallots, chilli, tamarind sauce, sugar, fish sauce & fry together for 1 minute & stir well.

Add the tamarind mixture to chicken wings & serve with basmati rice & salad.
