Khmer Vegetable Soup

Summary:

A soup rich with flavours from Cambodia that will brighten up any meal with its sweet and sour taste. This soup will not only surprise you it will delight you.

Ingredients:

  • 1 handful of bean sprouts
  • 10 chopped cubes of pineapple
  • 1 chopped tomato into large cubes
  • 4 cloves chopped garlic
  • 1 table spoon vegetable oil
  • 20 chopped Thai basil leaves
  • 1 table spoon tamarind seasoning mixture
  • 600ml water
  • 1 tee spoon salt
  • 1 table spoon sugar
  • 1 egg

Cooking method:

To make the soup add 600ml water into a pan & add salt & sugar & heat until boiling. Add pineapple, tomatoes & tamarind seasoning mixture & stir well for 3-5 minutes, reducing the heat. After, add bean sprouts & crack egg into water & turn the heat off.

Heat frying pan & add oil when hot add the garlic & fry until cooked. Add garlic to soup & stir well.

Remove soup from the pan & pour into serving bowls & sprinkle with chopped Thai basil.

Serve with basmati rice.
